Achari Chicken ( Moorg Achari)

Chicken with the piclking spices.

Ingredients

750 gms Chicken washed and cleaned and chopped into medium sized pieces
3 tbsp mustard oil or  any vegetable oil
fenugreek seeds, mustard seeds, cumin seeds, fennel seeds and onions seeds one tsp each.
or instead of it all one tbsp full panchforan (all five ingredients mixed) can be used.
3-4 green chillies ( slit them vertically)
turmeric powder 1 tsp, red chilli powder 1 tbsp and salt per taste and likings.
ginger garlic paste 2 tbsp
2 medium size onions and 2 medium tomatoes finely chopped
1 cup lightly beaten yoghurt
1 tbsp lemon juice

1/2 cup chopped coriander for garnishing

Procedure :

Wash the chicken pieces then add salt, red chilly powder, turmeric powder and ginger garlic paste. Add 1 tbsp oil and half cup yogurt apply thoroughly all over the chicken pieces. Cover it and keep it aside for marination by the time gravy is to be prepared.

In a heavy bottom sauce pan add finely chopped onion, fry it untill golden brown. Turn of the heat, let it cool. Then mince onion and tomato in a mixer to make fine pure.

Now heat a pan and saute this pure until it cooks and leaves oil from edges of the pan. Add chicken pieces, stir in and mix well. Make sure the pieces are sealed and coated in the gravy.

Add a cup of water and bring the curry to a boil, then simmer covered on a low heat cook 15-20 mins until the chicken is cooked through and succulent, stirring a couple of times.

In another small pan heat 2 tbsp oil  add 3-4 green chillies and panchphoran (fenugreek seeds, mustard seeds, cumin seeds, fennel seeds and onion seeds - kalonji). Sauté until they start to sizzle and pop for a minute or so. keep stirring to make sure they don’t burn, add a pinch of Asafoetida(hing) and now add this spicy oil to the chicken curry. Turn of the heat of pan.

Finally add 1 tbsp lemon  juice to make perfect tangy taste of the pickle. Garnished with coriander. Delicious Achari chicken is ready to serve. Though it can be served hot, tastes really good after few hours as the aroma of the panchforan, lemon and oil blends thoroughly into the chicken.

Tips :

I have used  yoghurt to make the thick gravy, which also helps to coat the chicken evenly.
You can add or reduce green chillies and red chilly powder to make this dish more or less spicy.
If this is made a little in advance the taste develops and is much nicer.
As per the name little more oil or splendid oil makes this dish real Achari. If you don't like mustard oil, then you can use olive oil or any vegetable oil.

Spiral Coasters

Hi !
while ago few days back I saw these beautiful spiral coasters while searching for something on the net. Since then i wanted to try my hand on it. And at the same time one of my friend said lets make it all together so she shared the pattern for us. This is verry easy and if you are a fast crocheter it hardly takes 10 min for one spiral coaster. you can use the leftover yarns to make more beautiful and colorful combinations too !

I m fascinated by the bright colors. Aren't they super cute? I just love them.

I so happy with the coasters so posting lots of photographs of my stuff.

You can find the pattern for them here on Made In K-Town's Blog. Thanks Barbara for sharing!

Paneer Franky

Ingredients:
Two cups of all-purpose flour (can make them whole wheat by substituting one cup of whole-wheat flour for white flour)
1 1/2 teaspoons of baking powder
1 teaspoon of salt
2 teaspoons of vegetable oil
3/4 cups of warm milk

Method:
Mix together the flour, baking powder, salt and oil.
Slowly add the warm milk.
Stir until a loose, sticky ball is formed.
Knead for two minutes on a floured surface. Dough should be firm and soft.
Place dough in a bowl and cover with a damp cloth or plastic wrap for 20 minutes.
After the dough has rested, break off eight sections, roll them into balls in your hands, place on a plate (make sure they aren’t touching) and then cover balls with damp cloth or plastic wrap for 10 minutes. (It’s very important to let the dough rest, otherwise it will be like elastic and won’t roll out to a proper thickness and shape.)
After dough has rested, one at a time place a dough ball on a floured surface, pat it out into a four-inch circle, and then roll with a rolling pin from the center until it’s thin and about eight inches in diameter. (If you roll out pie crusts you’ll have no problem with this.) Don’t over work the dough, or it’ll be stiff. Keep rolled-out tortillas covered until ready to cook.
In a dry iron skillet or comal heated on high, cook the tortilla about thirty seconds on each side. It should start to puff a bit when it’s done.
Keep cooked tortillas covered wrapped in a napkin until ready to eat.
Can be reheated in a dry iron skillet, over your gas-burner flame or in the oven wrapped in foil.
While you probably won’t have any leftovers, you can store in the fridge tightly wrapped in foil or plastic for a day or so.
Makes eight tortillas. - See more at: http://homesicktexan.blogspot.com/2007/03/and-end-to-my-quest-flour-tortillas.html#sthash.dVQu4w2t.dpuf

Franky is the most famous street food from Mumbai. It's a simple yet very filling and healthy dish. Here I m sharing recipe of  the veg franky.

Paneer Cubes - 1 Cup
Shredded Mozzarella  Cheese 1/2 Cup
Green chilies - 3 to 4 No's (Finely Chopped)
Ginger Garlic paste - 1 Teaspoon
Garam masala - 1 Teaspoon
Coriander leaves - 1 Table Spoon (Finely Chopped)
Amchoor powder - 1 Table Spoon (you can use lemon juice instead of this)
Salt - As per taste.
Sugar - just a pinch
Oil - 1 Table Spoon

Method :

For stuffing :

Heat oil in a pan, add onions and saute for a minute, then add ginger garlic paste, and green chilies and fry till the mixture till raw smell leaves. Now add the veggies (Carrot, Cabbage, capsicum), Paneer cubes and salt, fry in high flame. Make sure that the veggies are not fully cooked, it has to be crunchy. Now add garam masala to it, saute for some two minutes, switch off the flame, add lemon juice and a pinch of sugar. Then add chopped coriander leaves. Now the stuffing is ready.

I have used home made Tortillas. But you can use the ready made one's available in store's or left over roti's (Chappati).

For Tortillas

Ingredients:

Two cups of all-purpose flour (can make them whole wheat by substituting one cup of whole-wheat flour for white flour)
1 1/2 teaspoons of baking powder
1 teaspoon of salt
2 teaspoons of vegetable oil
3/4 cups of warm milk -

Method to make Tortillas :

Can be reheated in a dry iron skillet, over your gas-burner flame or in the oven wrapped in foil.
While you probably won’t have any leftovers, you can store in the fridge tightly wrapped in foil or plastic for a day or so.
Makes eight tortillas.

Now take one Tortilla/Wrap or Roti, spread little butter first then add a spoonful or more of veggie stuffing horizontally in the end of the wrap/roti, spread some shredded cheeze then roll it tightly, tuck in both the sides, and cut it in to two pieces.

You can serve it with tomato ketchup or as per likings with the sweet Tamarind chutney or spicy green Mint chutney.
Variation :

You can add your favorite veggies.
Instead of Paneer cubes chicken or meat cubes may be replaced for non veg lovers.
To make it less spicy for kids garam masala may be replaced by cumin and black paper powder

Crochet Hooks Container

Yesterday afternoon I was getting bored. An idea clicked me when, I saw an empty box. Started using a black pen... and the design turned out so nicely.

After completing the design, the box looked so pretty and marvelous !! I have coated it with a transparent adhesive tape, which will protect the intricate design and to make it durable too !

Now a days I am crazy for Crochet and have started collecting various crochet hooks, I'm gonna use this box to put them together, but still it could be used as a pencil box or a box for eye glasses.

Have a closer look at the design. Isn't it beautiful ?
